朱古力杏仁

又是另一個新嘗試,亦是為明天蔥友們的 ceci 房菜作的小小驚喜之一~

唔…不錯不錯…看起來很 sexy 呢~~

做法簡單,先把杏仁稍焗(如果沒有焗爐,放於平底鑊上乾烘也可以),但要小心,因為杏仁是很易燶的,要不時翻動,直到聞到杏仁香即可,放涼。然後把古朱力 (強烈推介 Valrhona 朱古力磚,於一般甜品材料鋪有售,又香又滑) 隔熱水融化 (如果溫度太高,融掉的朱古力就不會於室溫再次凝固,必於再次放回雪櫃),然後與杏仁混合一起,用小匙把沾了朱古力的杏仁作小球,放於牛油紙上放涼即成。
